निसर्गाची साथ मिळाली आणि पीक चांगलं आलं तरी त्या पिकाला बाजारात चांगला भाव मिळेलच याची शाश्वती कधी नसते. पण परंपरागत शेती करताना नवे प्रयोग केले तर याचा निश्चितच फायदा होऊ शकतो. काळे गहू (Black Wheat) हे त्यापैकी एक उत्तम उदाहरण म्हणता येईल. सध्या काळ्या गव्हाच्या शेतीवरून सकारात्मक चर्चा होत आहे. साधारण गव्हापेक्षा काळ्या गव्हाला बाजारात तब्बल चौपट भाव मिळत असल्याने याकडे उत्तम पर्याय म्हणून पाहिलं जाऊ शकतं. पंजाबमधील मोहाली येथील राष्ट्रीय कृषी अन्न जैवतंत्रज्ञान संस्थेने (नाबी) काळ्या गव्हाचे वाण विकसित केले आहे. विद्यापीठाने या गव्हाचे पेटंट देखील मिळवले आहे.

काळ्या गव्हाची शेती करण्यासाठी उत्पादन खर्च जास्त आहे. पण याच्या उत्पादनातून नफाही मोठ्या प्रमाणात मिळू शकतो. मीडिया रिपोर्टनुसार, बाजारात काळ्या गव्हाला प्रतिक्विंटल 7,000 ते 8,000 रुपयांचा भाव मिळतो. या तुलनेत साधारण गव्हाचे प्रतिक्विंटलचे दर 2,000 रुपयांच्या जवळपास आहेत.




पेरणी कधी करावी?

रब्बी हंगामात काळ्या गव्हाची शेती केली जाते. पेरणीसाठी नोव्हेंबरचा महिना चांगला मानला जातो. काळ्या गव्हाच्या पेरणीसाठी शेतात ओलावा अत्यंत आवश्यक असतो. नोव्हेंबर महिना उलटून गेल्यानंतर काळ्या गव्हाची पेरणी केली गेली तर उत्पादनात घट होण्याची शक्यता अधिक असते.

साधारण गहू आणि काळ्या गव्हामध्ये फरक काय?

काळ्या गव्हामध्ये अ‍ॅन्थोसायनीन पिंगमेंटचं (Anthocyanin pigment) प्रमाण जास्त असल्याने या गव्हाला काळा रंग येतो. साध्या गव्हात अ‍ॅन्थोसायनीन पिंगमेंटचं प्रमाण 5 ते 15 पीपीएम असतं. हेच प्रमाण काळ्या गव्हात 40 ते 140 पीपीएम असतं. काळ्या गव्हामध्ये अ‍ॅन्थोसायनीन (Natural Anti Oxidant and Antibiotic ) जास्त असतं. हृदयरोग (Heart Attack), कर्करोग (Cancer), मधुमेह (Diabetes), मानसिक विकार, गुडघ्याचे दुखणं, अ‍ॅनिमिया या आजारांवर हे अ‍ॅन्थोसायनीन खूप फायदेशीर ठरतं.

काळ्या गव्हाचे फायदे कोणते?

काळ्या गव्हामध्ये अनेक पोषक घटक असल्याने शरीराला याचे अनेक फायदे मिळतात. यात लोहाचं (Iron) प्रमाण अधिक असतं. कर्करोग, रक्तदाब, स्थुलत्व, मधुमेह अशा आजारांसाठी काळा गहू वरदान ठरतो. याशिवाय काळ्या गव्हाचा आहारात समावेश केला तर उत्तम दृष्टीसाठीही हे फायदेशीर ठरतं.काळा गहू बहुगुणी असून कॅन्सर, मधुमेह, ताणतणाव, हृदयरोग, स्थूलता अशा अनेक व्याधींमध्ये उपयुक्त आहे. याशिवाय काळ्या गव्हामध्ये अँटीऑक्सिडंट्स, बी जीवनसत्त्व, फॉलिक अ‍ॅसिड, सेलेनियम, मॅग्नेशियम, मॅंगेनीज, जस्त, कॅल्शियम, लोह, तांबे, पोटॅशियम, फायबर आणि अमिनो अ‍ॅसिड असतात, त्यामुळे या गव्हाचे पोषणमूल्य अधिक आहे. समृद्ध पौष्टिक व सकस आहारात त्याचा समावेश करता येईल. अ‍ॅन्थोसायनीन (१४० पीपीएम) या घटकाचे प्रमाण जास्त असल्यामुळे हा गहू काळा असतो. अ‍ॅन्थोसायनीन हे अँटीऑक्सिडंट आहे. म्हणजेच ते रोगप्रतिकार शक्ती वाढविणारे आहे. ब्लूबेरी, जांभूळ या फळांमध्ये अ‍ॅन्थोसायनीनचे प्रमाण खूप जास्त असते. त्यामुळे या फळांचा रंग काळपट जांभळा असतो. अ‍ॅन्थोसायनीनमुळे फळांची पौष्टीकता वाढते. परंतु जांभूळ आणि ब्लूबेरी वर्षभर उपलब्ध नसतात. काळ्या गव्हामुळे ही पौष्टीकतत्वे रोजच्या आहारातून अगदी सहज आपल्याला उपलब्ध होऊ शकतात.




काळ्या गव्हातून उत्पन्न अधिक

साधारण गव्हाच्या तुलनेत काळ्या गव्हाचं उत्पादन अधिक मिळू शकतं. एका अभ्यासानुसार, अर्धा एकर क्षेत्रावर 1000 ते 1200 किलोपर्यंत काळ्या गव्हाचं उत्पादन मिळू शकते. क्विंटलचा दर 8000 गृहित धरला तर जवळपास 9 लाख रुपयांपर्यंत काळ्या गव्हापासून उत्पन्न मिळवता येतं.

कोणते पदार्थ बनवता येतील ?

चपाती, पराठा, पुरी, नान या सारख्या रोजच्या जेवणातल्या पदार्थाशिवाय बिस्कीट, केक, पिझ्झा बेस, नुडल्स, बर्गर यासारखे पदार्थही काळ्या गव्हापासून बनवता येतात. त्यामुळे लहान मुले आणि प्रौढांच्या आहारात काळ्या गव्हाचा समावेश करणे अगदी सहज शक्य आहे,
